This species is used to make soup and stew in Peru; is also an economically important seaweed in Chile where it is the main source of carrageenan. Carrageenan is a very widespread, naturally derived compound which is used extensively as a stabilizer in food and cosmetic products. This seaweed is also used as a whole food throughout S America and is even exported to Asia for use in their food industry. C. chamissoi is a highly valued as a delicacy in Japan.
