Porphyra purpurea (R)

In China, practically all species are collected and used as food (“Zicai”, “purple vegetable”), and some cultivation takes place; the weed is seldom eaten fresh in Japan and nearly always is made into thin sheets like paper, and dried for preservation; this is heated over the fi re and eaten with broth, or by itself with a little soy sauce; it is also used for various other culinary purposes. in Japan and Korea they are also extensively cultivated and commercially exploited in large quantities. Used also as food in the US, and NW Atlantic.
