In China, practically all species are collected and used as food (“Zicai”, “purple vegetable”), and some cultivation takes place; the weed is seldom eaten fresh in Japan and nearly always is made into thin sheets like paper, and dried for preservation; this is heated over the fi re and eaten with broth, or by itself with a little soy sauce; it is also used for various other culinary purposes. in Japan and Korea they are also extensively cultivated and commercially exploited in large quantities.
